Five Easy Herb Sauces

Don’t know what else to do with your garden herbs and spices? Turn them into quick and easy herb sauces! Stock them in your fridge or pantry for unexpected dinner guests, last-minute potluck parties, and weekday meals when you are simply too tired to cook.

Simple Salsa

2 cups tomatoes, diced
1 red onion, quartered
4 cloves garlic
1 cup roasted chilies, diced
Juice of 2 limes
1 Tablespoon salt
1/2 Tablespoon black pepper
1 Tablespoon garlic powder
1 Tablespoon cumin
1 Tablespoon dried cilantro

In the bowl of a food processor, process diced tomatoes until desired consistency and transfer to a large mixing bowl. Add red onion and garlic to food processor and process until finely minced; stir into tomatoes. Add green chilies and jalapenos. Add lime juice, salt, pepper, garlic powder, cumin and cilantro and mix well.

Easy Basil Pesto

2 Cups Fresh Basil Leaves (Packed into the cup)
2 Cloves Fresh Garlic (hulled)
½ Cup Extra Virgin Olive Oil
¼ Cup Walnuts (or cashews)
½ Cup Parmesan Cheese

Give the basil leaves a rinse. Put the Basil, Garlic, Walnuts and Parmesan into your food processor or blender and process. Slowly add the olive oil to the mixture and continue to process.

Easy Tzatziki

2 cups homemade yogurt or Greek yogurt
2 medium cucumbers, finely diced
2 cloves garlic, finely minced
1 tablespoon olive oil
juice of half a lemon
1 tablespoon chopped fresh dill

Stir all the ingredients together in a large bowl and chill for an hour in the refrigerator.

Basic Arrabiata Sauce

2 cups diced tomatoes
2 tablespoons olive oil
1 teaspoon crushed red pepper flakes
4 cloves garlic, minced
1/3 cup chopped fresh basil
1/2 teaspoon salt and pepper to taste

In a large saucepan, combine tomatoes, olive oil, and red pepper flakes. Simmer 30 to 40 minutes, or until sauce is thickened. Stir in garlic, and simmer 10 minutes. Remove from heat, and stir in basil, salt and pepper.

Simple Lemon Herb Sauce

1/4 cup light (low-sodium) soy sauce
2 1/2 to 3 tablespoons fresh lemon juice
1 1/2 tablespoons minced garlic
1 1/2 tablespoons sugar
1 1/2 tablespoons chopped fresh basil leaves
1 1/2 tablespoons chopped fresh cilantro leaves

In a small bowl, combine the soy sauce, lemon juice, garlic, and sugar. Stir until the sugar dissolves. Add the basil and cilantro.
